Fig, plum and blackberry treat
This has to be the ultimate autumn treat for slim and healthy bodies. It’s fragrance, colours, textures and tastes delight on all levels.
Nutritionally, it is packed with antioxidant goodness and vitamins, especially betacarotene and vitamin C, also calcium, magnesium, phosphorus and potassium.
Serves 4
- 2 large fresh, ripe, figs, sliced
- ¼ large cantaloupe melon, rind and seeds removed, then diced
- 4 fresh, ripe, purple plums, diced
- 150g / 6 oz blackberries
For the garnish
- 4 small sprigs mint
- Take four individual glass serving dishes.
- Fill the base of each with diced melon and plum.
- Place slices of fig on top.
- Garnish with redcurrants and a sprig of mint.
