Orange flavoured quinoa - Breakfast or dessert dish

The flavours of orange and quinoa marry well and combine to make a delicious and sustaining, high protein, relatively low fat breakfast or dessert.

Quinoa is a high quality protein food grown in the Andes mountains of South America. It is also a very good source of calcium and iron as well as some phosphorus, vitamins B, E.

Serves 2

  • 5 oz quinoa grains
  • ¾ pint water
  • ½ vanilla pod
  • 1 orange, juice and a little zest

For the garnish
  • 2 tbsp natural live yogurt
  • a few pistachio nuts

  1. Place quinoa, vanilla pod and water in a pan.
  2. Bring to boiling point, then reduce heat and simmer for about 10 minutes, till grains separate.
  3. Stir in orange juice and zest.
  4. Serve, garnished with a little yogurt and a scattering of pistachio nuts.
